The beans' distinctive aroma is enhanced by roasting, the first process carried out in the production of Cocoa aromatics. The roasted beans are then pressed to separate the Cocoa Butter from the powder, which is the aromatic, defatted part used in extraction. Interestingly, the defining molecules that create the Cocoa aroma are literally unbelievable: Researchers have isolated about 25 volatile aromatic molecules from Cocoa - some with unthinkable odors like rancid sweat, cooked cabbage and potato chips. The study showed that when these 25 strange isolated volatiles were recombined, human subjects were fooled into thinking they had smelled chocolate! Cocao Absolute contains a small amount of caffeine, if you are highly sensitive to, or have an allergy to caffeine, we recommend avoiding this oil. Soluble in alcohol, partial soluble in fixed (vegetal) oils. In addition, Cocao Absolute is not recommended for aromatherapy; it is intended for use in perfumery only.
